In OLIMPO, we desired to elaborate a new, limited range of special, selected wines elaborated from our own very cared vineyards’ grapes. We believe that this is the main step for a real high quality result.
The grapes are selected just in the best maturation time. As our Cellar is very close to vineyards, they are moved quickly, at low temperature, keeping their extreme freshness in the downloading moment.
In a very traditional way, grapes fermet separately in low capacity tanks. They are constantly looked out and the operations are accurate, on time and true to the Pepe Hidalgo’s guidelines, a Spanish famed prescriptor.
Dark, silence and French oak wood. Three simple ingredients that provide aromas, flavours and ageing character to the wines, wich rest in 225 litres oak barrels.
